This pasta recipe was a hit! Very quick for those days when you get out of work late.
Great for casual dining, and getting the kids fed in the most deliciously nutritious way. It’s a win win.
INGREDIENTS
SERVINGS 4-6
2 cans of diced tomatoes
1 can red kidney beans (any beans will work though)
2 cups veg stock
1⁄4 cup fresh or dried herbs (rosemary, parsley, oregano)
2 garlic cloves
4 spring onions
1 teaspoon coconut oil
1⁄2 teaspoon salt and black pepper
3 cups of spinach
1 tablespoon tomato paste
Fresh or dried chilli (optional)
1 bag Happy Earth People red lentil pasta
DIRECTIONS
Sauté spring onions and garlic in coconut oil.
Bring tomatoes, kidney beans, stock, herbs, tomato paste and seasoning to the boil in large saucepan over medium heat for about 10 minutes
Add pasta, stir, turn heat to low, and cover.
Stir frequently until pasta is tender 7-8 minutes.
Turn off heat and add spinach to wilt and fold into the pasta mixture.
Sprinkle with chilli if desired.
