Celebrating Women with this Spinach Avo Pasta

Sometimes it’s tough to get in all the nutrients we need as women, making this fibre-packed recipe a true kitchen treasure! Iron-rich, full of calcium and folic acid – a vital compound for pregnant women and women’s health in general, this wholesome recipe makes the perfect addition to any fem-centred feast!

Lovingly curated by power-mom and chef, Amy, also known for her blog An Earthen Life. This recipe is also an easy go-to for those busy days when you have 101 things to do but are not willing to compromise on your family’s nutrient intake.

Avocado & Spinach Pasta

Prep time: 20 minutes

Serves 4

Ingredients:

  • 1 Box Happy Earth People pasta – I used the Chickpea one for this recipe
  • 1 Generous handful baby spinach – Or spinach, kale, Morogo
  • ¼ cup fresh basil
  • 1 lemon
  • ½ large avocado or 1 small one
  • Pinch salt
  • 2 TBS olive oil
  • A dash water

Method:

  1. Bring the pasta to a boil and cook until soft. 6- 8 minutes
  2. To make your sauce. Put the avocado, basil, spinach, a squeeze or lemon juice, olive oil and salt into a blender and blend until smooth. Add the water to get the sauce really nice and saucy to be able to coat all the pasta.

Mix the pasta and the sauce together and serve with some lemon zest and crunchy nuts on top
